FRIENDLY CHOCOLATE BARS

Vegan, Gluten Free, Free from refined sugar

Because I haven’t eaten a single shop-bought sweet since February 2018 🤤 I sometimes make my own. My home-made sweets are free from all that fancy crap (maltodextrin, cane sugar, mono- and di-glicerides, E120, aromas, etc) and they satisfy my chocolate cravings as well as my creativity need. I usually make my favourite energy balls, but sometimes I just desire something looking more sophisticated. 😉  

What you’ll need:

  1. 100 g of cocoa butter drops.
  2. 1 tbsp of coconut oil.
  3. A handful of chopped nuts of your choice.
  4. ¼- ½ cup of puffed amaranth or quinoa or a mix of both.
  5. Optionally you can add some dried fruit.
  6. 1-2 tbsp of honey dependently how sweet you like your chocolate bars.
  7. 1-2 tbsp of cocoa powder (It’s up to you how strong you want it!).
  8. Silicone moulds.
  9. A pan, obviously. 😆

Method:

1.     Melt your cocoa drops in a pan on a low heat, add coconut oil and wait until it’s melted. Add cocoa powder and whisk until smooth.

2.      Stir in honey until everything is melted and smooth.

3.      Your mixture should have a consistency of a melted chocolate.

4.      When your liquid chocolate is not too hot, add your amaranth, quinoa, dried fruit and crushed nuts. Mix well and you can pour your mixture into silicone moulds.

5. When cooled down put in the fridge for a few hours to set. 

Tip: You might prefer to lay out the silicone moulds with baking paper to remove chocolate bars easier when they are set.
